My grandma used to make this meatloaf and although I’m sure many people know some version of the recipe; I’m publishing it for anyone who doesn’t. It’s simple, with very few ingredients and is one of our go to dinners in our family.
Here’s what you’ll need to make it:
1 lb ground beef
1 can of chicken noodle soup (you can use chicken with rice as well)
1 box of stuffing mix
Mix ingredients well and form into round pattys. In your electric skillet or large, flat saucepan, cook pattys on medium high heat. Cover, and flip after bottom is cooked. About 10 min depending on how thick you make your pattys.
You can also cook as a loaf but flipping it isn’t so easy and I like each person to have an individual portion. This makes 4 large or 6 small meatloaf pattys. Sometimes we even put them in a bun and eat them like a hamburger.
We like to have leftovers so I usually make a double batch. Enjoy!
