If there is one thing that is a common theme in my household, it’s easy. I don’t appreciate a recipe with tons of ingredients or ingredients that I can’t easily leave out or swap with things I have on hand. Are you with me? I think we can mostly all agree on that.
This is a 2 pot (1 pot, 1 pan), easy dinner idea that can be doubled or tripled for a larger crowd. It requires minimal chopping (tortillas) and then simply grating some cheese. Or you could buy the cheese already grated but that’s not my thing. All the rest is just throw it in stuff.
Here’s what you’ll need:
1 lb Ground Beef or Ground Turkey
1 can (10 ¾ oz.) Condensed Tomato Soup
1 cup Chunky Salsa
1 can (4 oz.) Diced green Chilies
½ cup Milk
6 Flour Tortillas or 8 Corn Tortillas (smaller ones) cut into 1” pieces
1 cup shredded Cheddar Cheese
I large skillet over medium high heat, cook meat until browned, stirring to separate meat. Remove from heat and pour off fat.
In the same skillet, add tomato soup, salsa, green chilies, milk, tortillas and half of the cheese. Spoon mixture into 2-qt shallow baking dish. Cover.
Bake at 400-degrees for 30 minutes or until hot. Sprinkle with remaining cheese. Serves 4.
