Summer Taco Salad

This salad is so yummy and super quick to throw together.


My Grandmother’s side of the family gets together every year for a reunion/picnic on Memorial Day weekend.  It’s a potluck style picnic and my Mom and I always make a huge batch of this salad to bring along.  It’s all gone in 30 minutes flat.


You should make it.  Seriously.

Here’s what you’ll need:

1 lb                 Ground Beef or Turkey

I can               Kidney Beans (drained)

1 head             Iceberg Lettuce (chopped)

2-3                  Medium Tomatoes (chopped)

1 cup              Grated Cheddar Cheese

1 small bag     Doritos (or your favorite tortilla style chips)

1 pkg              Taco Seasoning

French Dressing (Catalina is best) use as much as you like

Brown the ground beef or turkey in skillet, drain off fat.  Return to skillet and add taco seasoning following directions on the package.  Allow meat to cool.  In large mixing bowl combine all other ingredients except for dressing with meat & refrigerate for 1 hour or more.  Add dressing right before serving.

Serves 6-8 (or 4 really hungry people)

*Optional ingredients – Chopped Onions  –  Chopped Olives – Corn

** If you want to cheat and throw it all together even more quickly, buy shredded cheese and use cherry tomatoes.
