Moms Mandarin Salad


This salad is so perfect for summer and a treat for your taste buds all year round.  I’m not sure where my Mom got this recipe and she hasn’t made it in a while but it’s so delicious that I could seriously eat as a full meal.  With 2 different types of lettuce, this salad  makes your taste buds explode with its sweet and zesty ingredients like mandarin oranges, sliced almonds and salad dressing.  A perfect side salad that will surely satisfy everyone at your dinner party or luncheon.

Here’s what you will need:


½ cup                    Sliced Almonds

3 TBSP                     Sugar (or substitute)

½ head                  Iceberg Lettuce

1 head                   Butter lettuce

1 cup                      Chopped Celery

2                              Chopped Green Onions OR

                                 1/4 of a sliced red onion

1 (11 oz) can          Mandarin Oranges


½ tsp                    Salt

¼ cup                 Olive Oil

1 TBSP                 Parsley (fresh)

2 TBSP                 Sugar or sugar substitute

2 TBSP                 Vinegar (your choice)

Dash                   Tabasco or hot sauce

    1.  In a small pot, cook almonds and sugar on medium-low, stirring constantly until almonds are coated and sugar is dissolved.  Cool and store in air tight container.
    2. Mix all dressing ingredients and chill.
    3. Chop lettuce, celery and thinly slice onion and mix in a large bowl.
    4. Just before serving, add almonds, drained mandarin oranges and toss all with dressing.
