SUMI Salad

 

I know fall is in the air but I’m not pulling my boots and sweatshirts out of storage just yet.

This salad reminds me of summer.  I love its cold tangy taste and crunchy texture.  It’s perfect for potlucks, BBQ’s and end of summer parties.

SALAD

½ cup               Olive or Canola Oil

½ cup               Slivered toasted almonds

½ cup               Sesame Seeds

12                      Green Onions, finely sliced

1 head              Cabbage, finely chopped

1/3 cup             Grated carrot (optional)

5-6 3 oz. pkgs. Ramen noodles, broken up (minus the spice packet)

DRESSING

½ cup                 Sugar or substitute

2 tsp                    Black Pepper

1 tsp                    Salt

1 cup                  Oil

¾ cup                 Water

2/3 cup               Rice Vinegar

1 tsp                     Sesame oil (optional)

½ to 1 cup          Pickled ginger (optional)

¼ to ½ cup         Soy sauce (optional – omit salt if used)

Dissolve sugar in water and vinegar.  Add all other ingredients and mix well.  Chill for at least 2 hours.  Toss gently before serving.

Serves 10
